For lunch, Taylor and I made a delicious meal that I simply must share: Vegan BLT’s with tempeh-bacon.
For the bacon, I modified a tempeh-bacon recipe from my friend and excellent vegan cook, Melanie. The recipe is as follows:
Tempeh-Bacon:
1 8-oz. package of tempeh
2 tbsp. tamari/soy sauce
1 tbsp. liquid smoke
1 tsp. Bragg’s Liquid Aminos (or just more soy sauce)
1 tsp. pepper (I used freshly grinded garlic pepper)
Slice the tempeh into thin slices. The thinner, the better, in my opinion. Mix the soy sauce, liquid smoke, aminos, and pepper in a wide bowl (add a little extra if you like lots of flavor). Marinate the sliced tempeh for 5 minutes (or longer, if you want). Prepare a skillet with some vegetable oil on medium heat, and fry for 3-5 minutes on each side or until crispy brown (like bacon!). Put on a sandwich, in mashed potatoes, or eat just as is!
For our sandwiches, we used slightly toasted sourdough bread, spicy mustard, spring greens, tomatoes, freshly sliced avocado, and a lot of tempeh bacon. They were delicious. Edit: In fact, they were so delicious that we had to cook up round two for dinner!
